A modest 1U may run on 495-750W; a dual-Xeon GPU node needs 1100W+ for headroom and redundancy. Undersizing causes throttling or POST failure under load; a small margin buys efficiency and future capacity. Note that some high-wattage units (1570W/1600W) derate on 110-120V input, so verify your rack PDU voltage.
